Mexican Chicken Meatball Soup

You’ll shout Ole! when you taste this twist on a Mexican soup favorite. Expect a fiesta of flavor as you bite into the little meatball piatas.
1 package Tyson Fully Cooked Chicken Meatballs
1 tablespoon olive oil
2 medium onions, chopped
4 garlic cloves, minced
2 (4-ounce) can green chilies, chopped
2 (15-ounce) cans Italian-style stewed tomatoes, chopped, reserving the juice
8 cups chicken stock
1 tablespoon chili powder
2 teaspoon ground cumin
1 teaspoon hot sauce or to taste
salt and pepper to taste

Blueberry Smoothie

Packed with antioxidants and vitamin C power, this cool treat disproves the maxim, “If it tastes good, it can’t be good for you.”
1 pint fresh blueberries or 2 cups (10 oz.) frozen blueberries, slightly thawed
1 cup pineapple, orange and strawberry juice blend or pineapple-orange juice
1 container (8 oz.) nonfat vanilla yogurt
2 tsp. splenda
** Add 1 scoop of unflavored Protein Powder
In the container of an electric blender, combine blueberries, juice, yogurt, protein, and splenda. Blend until smooth, about 1 minute. Serve immediately in tall glasses. Garnish with blueberry skewers spiraled with thin strips of orange peel, if desired. Yields 2 portions.

Strawberry-Banana Yogurt Smoothies

Valerie has hit a fruit-a-licious homerun with the tropical fruit smoothie.
1 container of BREYERS strawberry sugarfree yogurt
1 medium banana sliced
1 cup thawed cool whip( regular or strawberry flavored which ever you prefer)
2 cups crushed ice
** Can Add 1 scoop of unflavored protein powder (Unjury is great !)
Place all ingredients in a blender container and cover.
Blend on high spped for 30 seconds or until well blended.
Pour evenly into 4 glasses.Serve immediately
Makes 4 servings

Creole Chicken Wings with Peach Mustard Sauce

4 Cloves Garlic, Minced

Nutty-Cheesy Party Corn Muffins

DX created this High-Protein Corn Muffin Recipe that will knock your socks off!

Dry Ingredients:
1 pack of Krusteaz CarbSimple Cornbread mix (Cornmeal with additives)
(If this specific product is unavailable in your area, substitute any Reduced Carb Corn-Meal Mix)
1/4 cup of bean flour
1/4 cup of Krusteaz CarbSimple bread dough mix (same substitution here)
1/4 cup of fine Yellow Corn Meal
1 tablespoon of Gen-Soy or UnJury Un-Flavored Protein Powder
1 teaspoon of Baking Powder
1/2 teaspoon of salt (I use butter flavored popcorn salt. Yum!)
2 tablespoons of Flaxseed Meal
1 to 2 tablespoons of Splenda (to taste)

Almost Guilt Free Biscuits (REALLY!)

Dx, the mad scientist of the kitchen, has duplicated Grandma’s biscuits with all of the love but a fraction of the evil.
Being a Southerner, the ability to make biscuits is genetic. But, the problem with biscuits is that ole Devil, White Flour. Well, I’ve made a pretty good deal with that Devil. My “old style” of biscuits was to start with a good deal of Martha White Self Rising Flour, cut in shortening until it was grainy like cornmeal, mix in some buttermilk until medium dough consistency, softly roll out on a floured board to 1″ thick, and cut with a biscuit cutter. Recipes – Post Surgery Diet

After gastric bypass surgery, your eating habits will probably change dramatically. Not only will you be eating smaller portions, you may also find that you like different foods than before, that you have a bad reaction to certain foods (especially sugars), and that you need to boost your vitamin intake. This section includes a selection of scrumptious recipes that are perfect for “posties” like us. You’ll find a variety of flavors and cuisines, and all the foods are easy to prepare. Most of the recipes here were created by others who have had weight loss surgery, and who understand the dietary issues we face. All of the recipes are sugar free, and some include special instruction for adjusting the portion sizes. If you enjoy the dishes described here, a couple of our resident chefs have published cookbooks to help you eat healthily post-WLS. I encourage you to check them out. I also hope you will share your own favorite foods.
