I have a question. Are dried vegetables bad for you? I know they're vegetables, but are they not good for you?

I found some dried vegetables at a place called Market Place. They are delicious!!!

I have never eat them but Dave posts about dried peas. So what types do they have or are they all kinds? This is somthing I will look into if they are that good. I love veggies.

I had come across dried veggies (mixed) at a produce/fruit market before surgery. How funny is that, I was thinking about them today, they are kinda like potato chips (Because I think there is a little oil in preparation) and lightly salted. Thet were sooooooooo good. It depends if the ones you are talking about have oil on them, it was ever so light, but there none the less. They are still a better choice then regular chips. These were eggplant, sweet potatoes, green beans, carrots and I do believe white potatos too.

Check the labels for nutritional value. The dried peas I get have a small amount of salt on them. But the bin lists the nutrional value per 1/4 pound. Best part of the peas is the protein level. 1/4 has 6 grams of protein. I'd imagine the beans would be close to that also. I'm sure if you did a google on nutrional value of dried..... , you'd find an answer. I did that with dried peas, and came to a link within The World's Healthiest Foods

We traditionally have lots of dried food here. They were dried mainly for preservation, and the nutritional contents are higher than in the fresh form, since water is reduced to almost zero, and what remains is just the *meat* so to speak.
Per gram, their nutritional values are higher than fresh veggies. Also keep in mind that the calories per weight are higher too, as it's the water content that brings down the calories of veggies, though it is lower than fried chips.
So check out the labels, and don't fill your pouch with them, use them to satisfy your crunchy craves.

since they were mentioned and because they had been on my mind...I went and got some yesterday. I was a little hesitant, but then I thought exactly what you said, just as a little 'crunchy craving' fixer...it's better to have a handful of these then to fret over it and end up reaching for real chips.
