Question 1st Day of pureed food....

I made it through my first day of pureed foods..
Breakfast-Shake
Lunch - Egg Salad 3oz
Dinner - Ricotta & refried beans 3oz combined

I don't understand how I'm suppose to get 60gms of protein in... I would have another shake but I can't fit it...
so I guess this a problem.

Yes, you can often get insurance cover for your Weight Loss Surgery.

I went back and looked at my pureed days. It seems I ate alot of greek yogurt (still do), it has alot more protein. YOu can also add a 1/2 or full scoop of protein powder to it and a little applesauce.
Are you making your protein shakes with milk? That will add a bit more.
I also was told by my clinic to have at least two glasses of milk a day with SF Carnation so that added more.
Just some suggestions, it'll get easier.

I would also suggest yogurt, it's a staple for protein. You mentioned egg salad, I'm not sure that's exactly pureed, but aside from that, maybe tuna would be an ok option if you tolerate the egg salad. Tons of protein in the fishes.

The first priority is to get your fluid intake up to spec, then you increase the protein over a period of time as your body will allow. Your pouch capacity is reduced right now by post-op swelling. That'll go down as it heals, increasing the amount of food you can take in at a sitting.

You need to be aware of your protein intake, and be working towards satisfying it, but don't panic if it takes a few weeks to get there.

While you're working on it, do a search in the archives for "hair loss". That's next!
