Default Easter well holiday's!

I never realized how much food is the center of the holidays! I can't stand it! Trying to switch it around at my house. But is that fair to my kids? What is everyone else making for the holidays?? I used to do French toast for breakfast with bacon, lunch was veggie trays chips cheese tray egg salad ect. And dinner cheesy potato ham green beans corn rolls. And several deserts. This year eggs for breakfast. Lunch everyone eat on your own. Dinner ham green beans. That is all I got so far.

I am 8 days post op this year and not eating any foods yet so Easter will be different this year. I almost decided on not going but I'm stronger than that, it's one time. Next year ill make something I can eat and take it.

I believe we all have our own reasons we had to get this surgery. But why would your question serving healthy food to your children instead the high calorie stuff?!?! We should be their EXAMPLE now! Maybe cooking a healthy way for your kids, might save them from poor food choices when they are adults. I firmly believe it's up to ME to show by example healthy food choices to both my husband and son. So, I am the Mama, the cook and the one who makes a meal plan, buys the food and serves it. No longer will you find junk food (ok, potato chips are abundant). No ice cream, no little Debbies, no candy, no sugar laden "snack food". We have a variety of fruit available every week. Salads almost every night and I make sure we have veggies (hummus as a dip) cut up and available.

There are many many excellent recipes out there and even on this board. Our Pascha (Easter) isn't until May 5th. During this time, we eat vegan and gluten free. I try to make it fun and interesting. Last night we had black bean and mushroom burgers on GF buns with a spinach salad topped with silvered almonds, tomatoes and red onions. Tossed with balsamic vinegar and oil.

When it comes time to break our fast and celebrate? I am planning on a baked chicken with roasted root veggies, salad and a honey dressing. For breakfast? Special hard boiled eggs and Pascha (a special cheese that takes a week to make, starting with quark) on GF bread. For lunch? An array of cheeses and meats to make sandwiches (for me, a salad)

This is a time to get CREATIVE! TRY new and wonderful things!! I have always HATED tofu UNTIL my surgery. NOW? It's my go to food!! My tastes have changed and it's because I was forced to seek out new recipes and create more healthy food choices. So, the photos: My tofu I got the next 2 weeks of meal planning. Lotus root. I am going to dehydrate them with sea salt. I have had them fried/tempura, but we all love them and I think they are going to be a good snack alternative. I love my Kimchee. I found a great new tiny, off the beaten path Asian Market that I got them at. The next photo is a Tofu quiche. Let me tell you, it was GOOD. I was expecting it to be bland and yucky (to be honest here, I like firmer tofu) But I added in some nutritional yeast, old bay seasoning and it had spinach, yellow pepper, onion and mushrooms I sauteed. I put corn tortillas as the crust because Sebass can't eat gluten. If we were not fasting, I would add in some ground turkey and maybe some southwest seasonings instead. No need for cheese either. But I guess you could add some. Remember, we are eating a special diet and so I really have to come up with WLS/vegan (except we can eat shellfish) and Gluten free!! If I can do it with these restrictions, YOU CAN TOO!!!

As we shed the weight, we should shed our poor food choices and embrace a new healthy lifestyle. We work hard for each pound lost. We honor ourselves by what we eat. Our families will learn to eat a new way and that is GREAT! Nothing wrong with teaching new food choices.

I agree about making new foods, I am trying to teach myself how to make food that taste good! I seem to eat the same things. Baked pork chop chicken and fish.
