I can do hard boiled if they are broken up, like in a salad. Egg salad goes down but makes me a little queasy. But right before my emergency bowel surgery I ate over easy eggs for breakfast and they came back up. Can't even look at them since.
KATH!!! That recipe sounds sooo great! All this talk about eggs...I hadn't really been 'moved' to rush to eat eggs. Although, this week is my 18mos post op. surgiversary....I've been doing pretty well on eggs for a while...but just eat them ever so often.
But just reading your egg salad recipe....I'm thinking --hmmmmm -- maybe should make some of that this week. _____________________________________

Continue trying eggs...I remember 'scrambled' was iffy. I think some of it is in the cooking - they were too rubbery. But if they were lightly scrambled....and then we'd add some cheese it worked better. The best way that worked for me to prepare eggs was poached & hard boiled. (wish I would've thought about egg salad back then!!)
Anyhow... I'll be trying your recipe this week...thanks for sharing!
