Here is the recipe I promised, sorry for waiting so long, it just slipped my mind here, I have been so busy lately. These pancakes are very good, taste just like pancakes and even use these as wraps for strawberrys and whipcream inside of the wrap. I eat them plain with nothing on sometimes. And at the same time loaded with protein. Simple and easy to make. My daughter makes alot of them,then she freezes them in serving size ziplock bags.

Ricotta Pancakes

4 eggs
1 cup ricotta cheese
1/2 teaspoon vanilla
1/3 cup soy protein isolate
1 tablespoon olive oil
1 tablespoon splenda
pinch of nutmeg
Mix all together and it makes pancakes or waffles. These freeze real well.
