Default What to do with Greek Yogurt

I had to make the trip to Richmond today and went to the only Health Food Store to buy the Greek Yogurt that everyone talks about. They had the flavored ones but they were only 10 grams of protein. The plain one was 15 grams of Protein. So I bought two of them. Then on my way home I got to thinking -- I hate plain yogurt. What do you all do with the plain. I was thinking of adding some blackberries to it. Thanks for your input.

PS: My stall is going on the 4th week. Ahhhh!

Cucumber Salad
  • 2 medium cucumbers
  • 2 green onions, chopped
  • 1 t. salt
  • 2 T chopped basil
  • 2 T chopped parsley
  • 1/8 t. pepper
  • 1 T minced garlic
  • 1 c. plain yogurt - drained
Peel and cut cucumbers lengthwise, into quarters. Cut cucumbers into small pieces.
Mix cucumbers, green onions, and salt. Let stand for ten minutes.
Mix in remaining ingredients except for yogurt. Refrigerate for at least one hour.
20 minute before serving, drain salad thoroughly. Fold in yogurt.

You can make yogurt "cheese" with plain yogurt by putting a coffee filter in a colander, put the yogurt in the coffee filter, then let it sit in the fridge for a few hours. The longer you leave it to strain, the thicker it will get. I've used it to replace ricotta cheese in recipes and it also makes a fantastic "mousse" when you add shake powder to it.
