Default Help me with a menu

I have a very dear friend coming to dinner on Sunday that has had bypass surgery 3 years ago. She said she can eat anthing, just smaller portions. What would be a good menu to serve? I can wait to talk to her and get some personal insite on her surgery. She has done very well and has gone from a size 24/26 to a size 10. I can't wait to see her.

Alt Weight Loss Surgery Insurance
Yes, you can often get insurance cover for your Weight Loss Surgery.
Our own Craig "Big-T" Thompson has been there and done that, and he's written an e-book about it.

deb - how many people are you going to be cooking for? something that i have fixed where people are able to eat as little or as much as they want is something like you would find at Qdoba or Chipotle naked burrito bowls ~ i will do southwest style grilled chicken breast and cut it into bite size pieces; saute onion, green red orange bell peppers in olive oil together until tender; have shredded cheese; black beans; shredded lettuce; salsa; sour cream. this is one of my favorite things to make and will cook a lot so that there is plenty left overs to take for lunch for a few days!!!

If she say's she can eat just about anything, they you've got the green light to fix whatever you like I would avoid lasagna or other similar starchy dish, but lean proteins are great, especially served with fresh fruits and/or vegetables. A sugar free desert and non-alcoholic after dinner beverage to top the evening off. Hope you have a wonderful evening ~ it's so sweet of you to consider her.
