It is very difficult for me to chew foods until they are in a puree form because unfortunately I only have one molar on the bottom of my mouth. I am concerned that I will not be able to get the food chewed up small enough. Should I consider a baby food grinder for meats?

Especially early out that chew chew chew thing is very important. I still 18 months out run into problems when i dont chew something well enough.
I think u might need the magic bullet but suggest you discuss this with your surgeon pre op about this chew issue.
