Default Pumkin Walnut muffins

The pumpkin muffins are to die for. I love them. I put some cream cheese on them, and OH MY GOD they taste just like a really good pumpkin cheesecake. I will give you the original recipe and nutritional information, however when I make them I substitute some of the oat flour for protein powder (about 1/3 cup of baking protein powder) so that it increases the protein content. You do not even notice that the protein powder is in there. It is great and then each muffin has about 5 grams of protein and then with the cream cheese you can make it about a 8 gram protein snack that is a delicious muffin. I sometimes also make them in the really small muffin tins and then they are a great small treat.

PUMPKIN-WALNUT SNACK MUFFINS

I can't believe its not butter spray
1 1/2 cups whole-grain oat flour
1 teas pumpkin pie spice
1/2 teas ground cinnamon
1/2 teas baking soda
1/2 teas baking powder
1/2 teas salt
1/2 cup fat free no sugar added vanilla yogurt
3 large egg whites
1/2 splenda
1 cup canned pumpkin
2 table spoons chopped walnuts

Preheat othe oven to 350 F. Mist the cups of a standard nonstick muffin pan with I can't believe its not butter spray. Set aside

In the bowl of a food processor fitted with a metal blade, process the flour for about 1 minute until no coarse grains remain (I buy already processed oat flour). In a mixing bowl, combine the flour, pumpkin pies spice, cinnamon, baking soda, baking powder, and salt. Sift the mixture twice (I never do this). Set aside.

In a large mixing bowl, combine the yogurt and egg whites. With a sturdy whisk, beat until thoroughly blended. Add the sugar substitute and the pumpkin. Whisk to blend. Add the reserved flour mixture, stirring, until no flour is visible. Spoon the batter into the prepared cups until each cup is about 2/3 full. Sprinkle with walnuts.

Bake for 25-30 minutes, or until a toothpick inserted in the center of one muffin comes out dry. Cool in the pan on a rack for about 10 minutes. Transfer the muffins to the reach. Serve warm or cooled.

Makes 12 muffins

Store any leftover muffins in an airtight container in the refrigerator for up to 3 days or freezer for up to one month.

Nutritional Information:

Per muffin: 72 calories, 3 grams protein, 11g carbohydrates, 2 g fat (trace saturated), trace cholesterol, 2 grams fiber, 193g sodium.
