chili egg casserole
i havent made this yet, i am gonna make it this weekend
2 eggs
2 egg whites
1c milk
1c lite sour cream
4 scallions, sliced
1/2tsp salt
10 6 in. tortillas
1c shredded cheese
1-4oz can diced mild green chilies
1 1/2c cooked black beans, rinsed and drained
1..spray casserole with non stick cooking spray, preheat oven to 375
2..whisk eggs, egg whites, milk, sour cream, scallions and salt. Cut the tortillas into large wedges.
3..place 1/3 oftortillas on bottom of casserole. Top with 1/3 of the cheeseand 1/2 of the chilies and beans. arrange 1/3 of the tortillas on top of that, top with another 1/3 of the cheese and remaining chilies and beans. spread rest of tortillas on top. pour egg batter over casserole, rest of cheese on top.
4..Bake for 25-30 min
