Default Kara's Lemon Chicken w/ Artichokes and Capers

Made this last night and it was so yummy, thought I would share!

4 chicken breast cutlets (or 2 breasts cut to make thinner)
salt/pepper to taste
olive oil
juice of 1 large lemon (more or less depending on preference)
8oz chicken broth
1 can quartered artichokes drained
2 TB capers (more or less depending on preference)
1 TB butter
1-2 TB flour
1 clove minced garlic

Rub chicken with olive oil, salt/pepper, a little lemon juice. Cook on high in skillet to brown quickly, middle does not need to be cooked through. Remove from skillet.

In same skillet add chicken broth, lemon juice (less or more depending on how lemony you like it.), garlic. Mix butter and flour together in separate bowl then slowly add to sauce. Stir and let sauce thicken 1-2 minutes. Add chicken back to skillet and cook until chicken is done. (about 5 minutes) Add artichokes and capers, cook for 1 more minute, then serve! YUM!

You can skip the flour and butter and thicken the sauce another way, but this added great flavor and wasn't much fat and carbs for a large dish. My kids loved this over rice, but I skipped the rice and it was still great!
