Well I tried a concoction that I put together and let me tell you, full of flavor and FABULOUS!!!!!!! I probably could have lowered some of the cal with using a reduced tomato soup and leaving out the corn, but you can doctor it how you wish. 3 large green bell peppers 1.5 lbs of Jenny-o ground turkey 1 can of corn (11oz.) optional 2 cans of tomato soup 1/3 cup bread crumbs + topping 6 oz shredded cheese 2 pkgs. sazon seasoning (a non-spicy mexican seasoning) Boil green peppers for 20 minutes to soften them, then cut them into small bite size pieces. Preheat oven to 350 degrees. Cook ground turkey in a skillet with 2 pkgs of sazon seasoning (VERY important for flavor). In a casserole dish mix together green pepper pieces, cooked ground turkey, 1 can of corn, 2 cans of tomato soup and 1/3 cup bread crumbs. Top with shredded cheese to desired amount (I used approx 6 oz.) and sprinkle a few bread crumbs on top. Cook uncovered for 1 hour. I tried to approximate the nutrition facts per serving which got iffy when I tried to guesstimate how much cheese I used and how many servings I will get. I approximated 6 oz of the shredded cheese and I figured at least 10 servings for people who have had wls. This is what i came up with: 10 serv./ 193 cal./12.3g protein/7.7g fat/21g carbs/6.7g sugar/1g fiber I also added a small amount of Mortons Nature's seasons (salt, black pepper, garlic, celery,onion, parsley and spices) to boost the flavor even more when I sat down to eat it. This sat VERY well and talk about flavorful!!!!!!!!!!! Picky eating problem solved this week!

If you want to drop the carbs on that way down use the Kay's Naturals paremesan chips, grind them up for bread crumbs, they are my new bread crumbs for fish and meatloaf. Your carb count is kind of hi for me, I stay at 15g a meal for now. The recipe is a keeper though , great idea.
