Default Low carb enchaladas & hamburger hotdish recipes

Enchalada's

Fry up one pound of hamburger and then add 1/4 cup of enchalada sauce. Now take low carb tortilla wrap and spread one tablespoon of mexican cheese and then spread hamburger mixture and then roll up and put into a glass pan and keep on doing this till all the hamburger is gone. Then pour the rest of the enchalada sauce over all the wraps and cover with foil and bake for 45 minutes and then take foil off and put enough mexican cheese on to your likeing and bake till the cheese is melted.


Hamburger Hotdish

Fry up one pound of hamburger and then add one can of cream of mushroom soup (I use healthy choice), 1/4 cup milk and mix well. Then add 2 low carb tortilla wraps( cut into strips, noodle like and only about about an inch long.(what I do I take a wrap and cut it into 4 sections and then I cut it into noodle size) Put the cut up tortilla wraps into the hamburger and mix well and bake for almost an hour.

You can also do it another way, omit the cream of mushroom soup and use tomato sauce instead and have to spice it up to your likeing. What I do I add a little ketchup to my tomatoe sauce and add a little salsa. Do everything else the same and bake it the same way

You can also use the tortilla wraps for noodle soup, make soup the same way as noodle soup but subsitute low carb tortilla wraps for noodles.

My sister gave me that idea a few years ago and I was doing this before surgery and I just tried it the last two days and this all agrees with me and it is low carb. I can enjoy hotdishes again. Just revised.

I enjoyed eating the hamburger hotdish so much last night. Some time next week I am going to do the hotdish with the tomato sauce in it. I feel this way that I do not have to miss out on my favorite foods and I am going to revise until they taste good to me. What I like about these recipes is that the tortilla wraps that I ordered have 5 proteins and only 7 carbs per wrap. Really makes my hotdish low carb and a good amount of protein. When you cut up the wraps to noodle size they expand just like noodles do in the hotdish. I have so many plans for the the wraps and going to experiment with them in other dishes in the future, and if they are good I will post the recipes. I first experimented with the wraps the other day with the enchalada, because I was scared to try them with the stricture we all have. I was afraid of it not breaking apart enough, but I had no problem and was reading on the posts that lots of people were eating them. So I gave it a shot and wow, no problem with them. I think eating what a person enjoys is half the battle with this weight loss. Because if you miss what you were eating before surgery and think a person cannot ever have it again. Well I will revise and revise until I got it and I can enjoy with the rest of my family but in a different way. I do not want to resort to going back to my old habits to enjoy some of my foods I had before surgery. So I call this a new way of eating my old foods. If that makes any sence, but I get going sometimes I just ramble on and on. We are going to our daughters place tonight and I am going to get her pancake recipe and post that in the next few days. Those pancakes are soooo delicious and taste so close to pancakes. When my daughter gave one to me and my mom, oh my gosh delicious, my mom thought they were sooo good and good to eat without any sugarfree syrup on them. I got the stuff to make them now. Then to top it off they have a good amount of protein in them. The first time she made them, she always makes lots of them to last her a few days, her husband did not know that they were her pancakes and he ate the rest of them and thought my were those good pancakes but so small. Not realizing those her pancakes becasue when she makes them they are around 3 in. in diameter. She only eats about 2 or 3 of them and then she is full.
