I made this chicken the other night and it was really good! Not from a specific recipe (I used bits from a few) so amounts aren't precise, but you will get the idea!
4 chicken breast cutlets (I took 2 breasts and cut them length wise to make them thin)
1/2 bag fresh spinach chopped
4 garlic cloves diced small
1/3 c. lowfat sour cream
1/3 c. lowfat cheese (I used 2% cheddar but swiss would work good)
4 slices of turkey bacon
Seasoning (I used creole seasoning and a little salt and pepper)
1c milk
2 TB lemon
Set chicken in a ziplock bag with 1c. skim milk and 2TB lemon for 30 minutes to an hour or marinate as you like. This made the chicken really tender.
Saute spinach and garlic quickly until wilted, then mix all other ingredients (except bacon) together and spice to your liking.
Put mixture in center of chicken, then roll chicken up and wrap with a piece of turkey bacon. Bake at 375 degrees for 30 minutes until chicken is cooked. Put on broil for 3-5 minutes at the end to crisp the bacon.
This was really good and the bacon added a prosciutto like flavor to it. I overstuffed mine with the spinach since I really like it, but you could use less if you wanted.
