OK it was 97 today...YES for you all with tons of snow, 97 stinks too! As always with my recipes, change to your liking....I never follow things exact, but here's what I did today. I would say this serves at least 8 people, so reduce as needed!! - Rotissere chicken- ready made the ones you pick up hot (get one spiced how you like. I got Walmart's basil oregano one tonight) - Lots of veggies! (I had cabbage, spinach, zuchinni, snow peas, grated carrots, garlic, onions.) Be careful if you add broccoli as I have heard with the cabbage it can cause tummy problems sp if I do broccoli I don't do the cabbage. - Spice to taste (I used garlic spices and a creole mix) Put the entire chicken in a large pot and cover with water. Bring to a boil and simmer for 10-15 minutes to make a nice broth. Remove chicken from pot, pull off chicken and put it back in the pot. (discard bones, fat, skin) Throw in the chopped veggies and cook until they are to your liking. (I cook only a little I like mine a little crisp, not soggy) I used all fresh veggies- 3/4 of a cabbage, 1/2 bag spinach, 7 garlic cloves, small bag of snow peas, 3/4 bag of grated carrots, 1 zuchinni, 1 sweet yellow onion. Spice to your liking! I put in 1TB creole seasoning which gave it a nice kick. I have done asian seasoning before which was quite good- a little soy sauce and ginger. I make mine chunky with less broth and it has tons of chicken for the protein. Hope you like it- not fancy but quick and easy! I have a HUGE pot and I am going to freeze it in portions for an easy lunch I can grab. |

Wow Sounds Fast And Easy Compared To The Way I Make It. Lol Never Thought Of Using An Already Cooked Chicken. I Will Have To Try This!!!! Besides The Rotissare Whole Chickens Where I Am They Also Sell The Rotissare Breast Meat Only And Its Pretty Big!!!! ( I Usually Like White Meat) I Will Def Try This, Thanks |
