I tried to make this as low carb as possible and still have it feel like the same thing. Measurements are estimates I made. It was really good!

4 chicken cutlets (split 2 breasts in half lengthwise)
1/2 yellow onion
5 cloves of garlic
bunch of fresh basil
4 large tomatoes
1/2 c. egg beaters
1/3 c. italian breadcrumbs
1/4 c. ground flaxseed
1 tsp salt
1/4 tsp pepper
1/4 tsp red chili pepper flakes (optional)
Olive oil
1/2 c. mozzerella cheese
1/4 c. parmesan cheese

You could buy sauce to make this quicker but I made my own. Prepare, peel and chop the tomatoes, garlic and onion. Put garlic and onion in a skillet and cook until soft, add tomatoes and cook on low-med for 5-10 minutes. Add chopped basil and leave on low heat. May need to add a little water when cooking. Season to taste.

Mix seasoning, breadcrumbs, and flaxseed together. Dip chicken in egg beaters, then lightly coat with breadcrumb mixture. Put chicken in HOT skillet with a little olive oil and quickly brown. Place chicken in ovensafe dish, cover with tomato mixture, then top with mozerella cheese. Cover and bake for 20-30 minutes, or until chicken is done. Remove foil the last couple of minutes to brown the cheese a bit. Sprinkle with parmesan and serve!

Wow Kara you sound like a great cook. Me and cooking do not get along too well. I think I may have to move in?!?!?

I had chicken tonight at my folks and it stayed down for the first time. Wahoo... So I may have to try this but with a car of pasta. No home made from me. teehee
