Cottage Cheese Zucchini Casserole Prep: 20 mins Bake: 45 mins 2 lbs Zucchini; sliced 1 Cup shopped onions 1 Cup sliced mushrooms 1 Clove garlic minced 2 tblspoons oil 1 container (16 ounces) 1% cottage cheese any variety 2 Cups Shredded Sharp Chedder Cheese 3 eggs beaten 2 Tblspoons flour 2 Tblspoons Italian seasoning 1/2 tsp salt Heat oven to 350 degrees grease 2 1/2 quart casserole Cook and stir zucchini, onions, mushrooms and garlic in oil in large skillet on med high heat for 5 mins. Drain in a colander set aside, mix remaining ingredients in large bowl. Stir in vegetable mixture. Pour into prepared casserole. Bake: 45 mins or until knife inserted in center comes out clean. Makes 10 servings 190 calories 6g sat fat 9g carb 13g protein These numbers will come down if using low fat shredded cheddeer cheese and egg beaters, instead of oil can use something like pam spray. This did sound really good though, I am going to make this using the changes when I can eat this kind of food again. Enjoy!
