Default haven't tried yet but sounds good....

Okay so for my Birthday last year my parents got me a subscription to a cooking magazine called Light and Tasty. I usually don't find much to tempt me but this recipe sounds doable.....even if it is my nemisis..... the dreaded chicken. I was impressed by how much protein a serving had and thought I would share it with you all.
Hot Chicken Salad
1 1/2 tsp all purpose flour
1/2 cup fat free milk
1/2 cup plain yogurt
1/4 cup low fat mayo
1/4 cup low fat sour cream
1 tblsp lemon juice
2 tsp grated onion
1/2 tsp salt
3 cups cubed coooked chicken breast
1 cup chopped celery
1 can (8 oz) sliced water chestnuts, drained and coarsly chopped
1 cup seasoned salad croutons
1/4 cup slivered almonds chopped and toasted
1 cup soft bread crumbs
1 tblsp low fat butter, melted
3/4 cup shredded low fat cheddar cheese

In a small saucepan, whisk flour and milk until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. In a large bowl, whisk the yogurt, mayo, sour cream, lemon juice, onion and salt until smooth. Whisk in the milk mixture. Stir in the chicken, celery, water chestnuts, croutons and almonds. Spoon into a 2 quart baking dish coated with nonstick cooking spray. Cover and bake at 350 degrees for 25 min. Combine bread crumbs and butter; stir in cheese. Sprinkle over cassserole. Bake uncovered, 5-10 min longer until heated through and cheese is melted.
Nutrition facts: 3/4 cup equals 323 calories, 15 g fat, 78 mg cholesterol, 592 mg sodium, 19 carbohydrate, 2 g fiber and 29 g protein.

I really was going to make this soon, but will have to wait a bit since I forgot to buy the salad croutons...silly me. I hope that you like it.

Sounds good. Anxious to hear how it TASTES. I've seen that magazine before. It's nice because it has all the nutritional info for each recipe printed along with it.

Crap..... I knew I was forgetting something when I stopped at the acme here to get some cotton balls and crab salad....lol. Oh well I will blame it on not enough sleep. I will have to get some soon. We are almost out of milk anyway.

I do like that magazine.. some of recipes are good but some take so much ingredents, that you may not have on hand. I have made many of their soups, pretty good.
if anyone would like some recipes, just tell me what yor hungry for and I will look and post.

I did try it and have been eating it okay. It isn't something that I absolutely love, but outside of chocolate and cheetos...not much of anything lately is something I love so it is hard to tell. It does go down well, which considering it is chicken is saying a lot for me. My kids seemed to like it too. I will probably make it again but with more cheese shredded and mixed in the middle of the casserole not just on top. Try it and see what you think.
