Chipotles are smoked jalapeno peppers that add a spicy accent to foods. Canned chipotles en adobo are packed in a vinegar-and-spice tomato sauce.

• 2 pounds ground beef chuck
• 1 tablespoon Worcestershire sauce
• 1/2 teaspoon salt
• 1 cup (4 ounces) shredded cheddar cheese
• 1/4 cup mayonnaise
• 1 chipotole en adobo, finely chopped
• Pickle slices, cherry tomatoes and mini peppers (optional)

1. Preheat a grill or broiler. In a large bowl, combine ground chuck, steak sauce and salt. Form into six 4-inch patties.
2. Grill patties, or broil 6-inches from heat source, 5 minutes per side for medium-rare doneness (cook longer, if desired). Two minutes before the burgers are done, top with cheese.
3. Meanwhile, combine mayonnaise and chipotle in a small bowl. Serve burgers with chipotle mayonnaise, along with pickle slices, tomato and peppers, if desired.

*** Using nonfat shredded cheddar cheese and low fat or nonfat mayonnaise would bring down the fat and calorie count even further.
