Default Low Fat Baked Zesty Tilapia

Tilapia is a mild, sweet-tasting fish that lends itself to all kinds of flavors. It's a good substitute for flounder and orange roughy. Enjoy this Mexican-style tilapia dish with sweet corn and rice.
Prep Time: 5 minutes

Cook Time: 20 minutes

Ingredients:
  • 4 5-ounce Tilapia fillets
  • 2 tsp ground cumin
  • 1 tsp freshly ground black pepper
  • 1 14.5-ounce can Mexican-style recipe-ready tomatoes
  • 3/4 cup shredded reduced fat Jack cheese
Preparation:


Preheat oven to 400 degrees.
Lay tilapia fillets in a baking dish. Sprinkle cumin and black pepper over fish. Add canned tomatoes, and sprinkle cheese on top. Bake for 20-25 minutes. Serve with rice, sweet corn and black beans.
Serves 4

Per Serving: Calories 219, Calories from Fat 53, Total Fat 5.9g (sat 3.3g), Cholesterol 94mg, Sodium 272mg, Carbohydrate 6.3g, Fiber 1.2g, Protein 35.3g
** Tilapia is a really nice fish, it doesn't have that smelly fish odor or that strong fishy taste to it.

Hey, Clea, welcome home!! Thanks for resurrecting this one! It looks so good, I went upstairs and made it (with a couple of changes.) It's in the oven as I write this.

I added a bit of cayenne powder with the spices, and I mixed the tomatoes, corn and black beans together and spread them over the fish. It's now a one-dish recipe the way I did it. I'm not much for rice anymore anyway! Oh, yeah, I had a bag of frozen flounder in the fridge, so I used flounder fillets instead of tilapia.

Gotta go now and grate some cheese! I'll let you know how it comes out
