Default Noodle Cheese Salad

First off I am going to say that I did not measure anything. If you ever made noodle salad then you will know exactly how much to put in for the sauce.

1 cup cooked, skinni Spaghetti, I ordered these from the nutirtion site.
I can of peas and carrots(drained)
I used four kinds of cheese, 4 slices of american sliced, 3 oz sharp chedder cheese, 3 oz. veg. cheese and 3 oz. velvetta mexican cheese. I cut them up into little pieces.
thin sliced ham ( I used about 12 thin sliced ham and cut them up also into pieces.
1/4 cup of chopped onions (optional)
Mix this all together

Sauce for salad.
I used about 1/4 cup light miricle whip
1/4 cup carb free cream
1 teaspoon mustard
1 1/2 teaspoon creamy horseradish (optional)
sprinkled some pepper in.
Sauce is approximate, but pretty close.
Mix this and add to top mixture and mix all together and you have a very high protein salad.

Skinni Spaghetti details-- One container is 4 servings and 2 oz. to a serving, uncooked 2 oz serving has 14 carb. and 26 protein and has no sugar and has 11 fiber. I barely cooked up an 1 1/2 oz and I got about 1 1/2 cup of noodles once it was cooked up.

Cheeses- all high in protein

can of peas and carrots- 33 carbs. & 6 protein

Horseradish gives that little zing to it.

You can add chopped celery or chopped tomatoes and chopped peppers. I made due with what i had on hand.

My daughter does different cheese, she uses mild chedder cheese and modzarella. The reason I do not use modzarella is becasue I do not care for that cheese. And she uses mayo, where I use light miricle whip.
So you can really make this differnt ways and if you liked noodle salad before and you can still enjoy it but just healthier. This dish gets quite heavy becasue of the cheeses. It is very filling with just a little and it goes a long ways. So then the carbs are pretty low and is a whole meal for me. And you can revise this recipe to suit the way you like it but remember to keep it healthy.

Oh Kitty, this sounds like a fantastic recipe to make for a gathering! YUMMMM. I bet it would be GREAT with some Jalapenos or Tobasco in it! Thanks for sharing it...I love it!!!!

Oh Kim this dish is so delicious, I had 3/4 cup for snack this noon, since I spoiled my dinner with the four figs. It is so low in carbs and lots of protein in it. I use to love noodle salad before surgery and I was thinking that I can never have it again and just resigned myself to that, until my daughter made this salad but way different than I made it. She also did not use alot of the ingredients I did. I cannot handle modzarella cheese but she likes it so I picked it out and then my mind was rolling on how to make it close to a noodle salad. Wow did I hit the jackpot, it is so close to the real thing. I was thinking that I could even make it without the skinii noodles if I would not have them in the house. But I like it becasue low on carb and packed with protein. The worst carbs are the carrots and peas, but I like that feeling of the peas in my mouth when they pop and they taste so good, but for the amount it makes the carbs are pretty low per serving. I did not know what I was going to have for supper well I am having another serving of the salad tonight. Just leaving it in the frig. overnight blended all the flavors together. Kim you can put anything you like in there, however you had noodle salad before surgery but not the noodles or the bad stuff. I was even thinking of getting some celery and pickles for the next salad I make. I like the crunch in there. I like the cheeses I used and all really fit and taste nice together. I just love it when I can come up with a recipe that is almost close to the real thing. When my head starts rolling it bothers me until I can come up with the recipe.

Hey, you could put some water chestnuts in it for a crunch (they are pretty comparable to the carrots). I dont think that I would do the carrots, but def the peas. I used to love to put a can of peas in my chicken and dumplings (or as my neice calls it chicken and jumblins). Oh and what about some pimentos for color?! I think that I may try this recipe with some Swiss when I decide to make it. I LOVE swiss!

The pimentos would definatly give some color, I never thought about that. I was thinking of trying swiss myself one time. The waterchesnuts definatly give some crunch to that. Thanks for the ideas.

Thank you Edie, brocoli is another good idea to use in there and is a healthy veg. I was also thinking once my tomatoes are ripe that they would also be good in there and maybe even some cucumbers.
