Default Another revised recipe(Zucchinni Bars)

I revised this recipe today and wow is it ever delicious and tastes so close to the real thing. My daughter came out tonight and she ate a peice and just loved it and she took a big piece along home with her. She told me to write up the recipe for her. My next revising project is the oatmeal coconut cake, I love this cake and it is going to take some doing to revise this cake. But here is the Zuchinni bar recipe.

ZUCCHINNI BARS

2 eggs
1 cup splenda
1 cup grated Zucchinni
3 Tablespoon olive oil
1 tsp. vanilla
1/2 cup milk
1/3 cup Genisoy soy protein powder
2/3 cup carb quick powder
1/2 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon

Mix the eggs, splenda, oil, milk, vanilla, then add the grated zucchinni and then add the dry ingredients and mix well. You can add rasins and walnuts if you like.
Bake until done, about 20 to 30 minutes.

I ate it plain with no frosting on, but cream cheese frosting would be real good on top of this. I have to work on the cream cheese frosting. I was also thinking a 1/4 cup of sugarfree icecream would be really good on top of this too. I was also thinking of using shredded carrots instead of the zucchinni and that would make good carrot cake. Just a thought but I have not tried it yet.

KIM if you read this post, I made my homemade noodle cheese salad and I put in swiss cheese with my other cheeses and it really tastes good. I also put in celery in this time too. I only used peas, instead of the peas and carrot mixture. I only tasted a little bit of it, becasue I like to eat it the next day when all the flavors mix together.

Tomarrow I am going to make three batches of cho no bake cookies. I am going to make them all different. My daughter asked me if I would make a batch for her. She said she has no time to cook right now and is so busy learning for her CPA. I said that is no problem for me to make her a batch. I might make 3 different ones and give her some of each one of them, this way she has a varieity.

ohhh Kitty that sounds good! I make something very similar with pineapple in it too- I am going to have to try it with splenda and protein powder! Thanks for the idea!
