I got creative this weekend. Saturday night I went down to the freezer and came up with a few packages of chicken thighs I bought on sale earlier this year. Put them in the pressure cooker to thaw and cook them (50 minutes after the control jiggles, let cool normally for 5-10 minutes more), then popped them in the fridge with the broth (about a quart) in another container. After they'd cooled I stripped the meat off, stripped out the fat, skin, bones, and inedibles, cut up the meat and stuck it back in the fridge.
Sunday morning before church, I got out the crock pot. Threw in the chicken meat and broth (minus all the fat that had floated to the top and thickened for easy removal) and some cans of stuff, such as
1 small can green chilies
1 can corn with green and red peppers
1 can yellow hominy
1 can white hominy
1 can black beans
1 can dark red kidney beans
1 8-ounce jar of medium salsa (or mild, or not, as you choose)
1 pound baby carrots
1 onion, chunked
a dash of Tabasco
fresh ground pepper
I let that cook for about 8 hours, then thickened it with mashed potato flakes (works a whole lot better than using corn starch or flour!) into a thick stew. Peanut's nutritionist said today it's got lots of fiber, and it also is thick with protein. I put 8 containers of it in the freezer for quick use later. Note: this recipe fills a 6 quart crock pot.
Hint - to those looking at surgery soon - filling your freezer with stuff like this can really help when they let you start eating again. It doesn't take much to thaw this and then puree a portion of it. All the taste is still there, even if it has the consistency of mush!

You can leave things out, add other things, and in general customize any recipe to what's in the fridge. Turns out decent more often than not!
For this recipe, I was at the store and I looked at a recipe on the side of a cooked chicken breast can. They wouldn't recognize it, but it gave me a few ideas as a point of departure. Cooking is creativity with a purpose and a reward!
