| cake in a mug recipe
I cannot remember who posted a recipe of a muffin in a mug. Well that gave me an idea and I started to search on the internet for muffins made in a mug and this recipe popped up and so I made one the regular way for hubby and one low carb revised for me. It still is in the stage of trying to make it better. It is a little dry but hubby puts either coolwhip or pudding on it. I only ate a tiny piece of it becasue I was to full from dinner. later on I am going to eat my 1/3 piece of cake with coolwhip on top. It makes a big soup mug full of cake. I have to cut it into 3 pieces, it is just to much for me. Here is the recipe I used for the cake.
Cho. mug cake
1/3 cup of carbquik
4 Tablespoons of Splenda
3/4 Teaspoon of baking powder
2 Tablespoons coco
1 egg
2 Tablespoon butter(melted)
4 Tablespoon milk
In a little bowl mix carbquik, splenda, baking powder, and coco.
In the soup mug mix egg, butter and milk and then add the dry ingredients and mix well. If it is to dry add enough milk until it is the consistancy of a cake batter. Just pop into the microwave on high for 3 minutes and 15 seconds. Then take it out and stand the cup unside down till cool.
When I went to turn my cup around the cake fell out. now I made my hubbys with regular ingredients and his did not fall out I lostened it up and then had to prey his out and came out very well.
I want to try and make it with less carbquik and add some protein isolate into the flour mixture. But I am happy with the carbquik flour and I like the taste of the foods I make from it. I also want to try and make it with no coco in it and make it a white flavored cake. I want to try and make a cake with flavoring of maple nut or black walnut, banana, the list is endless with this cake.
Carbquik flour -- 8 protein & 16 carbs.
egg --8 protein
splenda-- 8 carbs
milk--3 carbs
Divided by three gives me --- 10 carbs, that is with coolwhip
5 protein
I got the idea from someone posting the muffin recipe and want to say thank you to you, but cannot remember who posted it.
With my researching the recipe on the internet I came up with a few more recipes that I happen to run into when searching the internet.

HI - i posted this recipe in the thread where kath was doing a mexican stand off with cupcakes in her house - yes, it is a bit dry.
Muffin in a Minute
1/4 Cup Flaxseed Meal
1/2 teaspoon Baking Powder
1/2 teaspoon cinnamon
1 tablespoon Splenda (optional)
1 egg
Mix everything together in a coffee cup. Cook for one minute in the microwave. Turn the cup upside down to take the muffin out. If it looks wet, let it sit for a minute or so. I have these for breakfast. You can add blueberries, or try other additions. Some people add a tablespoon of cream cheese before cooking.
Calories 195
Fat 9 gram
Protein 12 gram
Carbs 9 grams (net carbs 1)
Fiber 8 grams
Sugars 0 grams

Professor, I buy the carbquik from the nbutrition site where I buy lots of other foods. They have that flour. Their are alot of other places on the internet that sell that. This flour seems to work well with unflavored protein isolate, which I use in alot of recipes. The cake in a mug, I tried half and half of carbquick and protein ioslate and it came out really good and I cut the carbs in half. It was really good and tasty. The next thing I want to make is the muffins that joanie posted but will be substuting it with carbquick and protein isolate, becasue I do not have the ingredients she has posted.
