Default Muffin in a Minute from wannabe skinny

Muffin in a Minute

1/4 Cup Flaxseed Meal
1/2 teaspoon Baking Powder
1/2 teaspoon cinnamon
1 tablespoon Splenda (optional)
1 egg
Mix everything together in a coffee cup. Cook for one minute in the microwave. Turn the cup upside down to take the muffin out. If it looks wet, let it sit for a minute or so. I have these for breakfast. You can add blueberries, or try other additions. Some people add a tablespoon of cream cheese before cooking.

My husband is hooked on these. I'm looking forward to eating them in the future.
He has added one thing to the basic recipe - 1-2 drops of vanilla.

As a variation he has also added half a banana and nuked it a bit longer. Another variation - add 1 table spoon of mini chocolate chips.

adding the vanilla sounds like a great idea - i would stay away from the banana and the chocolate chips though.

they are very filling and i am only able to eat 1/2 of a muffin

I like this recipe and all the healthy aspects of it. I'm currently trying various flavors. It's really yummy with 1/4 chopped apple and 2 more T Splenda. I just tried it with 1T cocoa, 3T splenda and about 2T chopped pecans. Still trying to figure out a way to eat it without any liquids ~ am I doing something wrong? I do take tiny sips of milk with it so I can swallow it. I think the banana with some walnuts sounds good too. What is the concern with the banana? carbs? At 18 mos out, I can eat a whole one but it fills me up nicely. Thanks for sharing this recipe.

Martha - at our big Wegman's it's in the "Natural" food section. At our little Wegmans it's in the dairy section by the yogurt believe it or not! I'd never look for it there.
