Roux en Y Gastric Bypass
Default Morning Glory Muffin Squares

Cake:

2 Cups Carbquik
1 1/2 tsp. pumpkin pie spice
1/2 Cup unsweetened coconut
1/2 Cup shredded carrots
1/2 cup raisins (optional)
1/2 cup Splenda
2/3 cup carb countdown milk
2 tbls oil
1 egg

Topping:

1/2 cup carbquik
1/4 tsp cinnamon
1/2 cup brown sugar twin
4 tbs firm butter
1/3 cup of quick oats

Heat oven to 350. In a small bowl mix the topping, cutting in the butter, using fork until mixture is crumbly. (set aside)

In a large bowl, stir 2 cups carbquik, pumpkin pie spice, coconut, carrots, raisins (optional) and sweetener, stir in milk, oil, and egg. Pour into ungreased 8 inch square pan, sprinkle topping on top.
Bake 30 - 35 minutes or until toothpick comes out clean, cool 30 minutes before serving
makes 9 servings

Original recipe called for walnuts 1/2 cup in the cake and 1/4 cup in the topping, I didn't have walnuts so I substituted the coconut in the cake. I also added the quick oats to the topping because of not having the walnuts, shoot I didn't even have raisins but it came out very good.

This was very moist and taste like a carrot spice cake.
