Talking Shrimp Salad/Spread

Shrimp Salad/Spread
1 lb. of shrimp (cooked, peeled, & deveined)
1/4 c. Light mayonnaise (I prefer Hellman's)
Juice of 1/2 lemon, (about 1 T.)
2 green onions (scallions), sliced including green tops
1 teaspoon of Old Bay Seasoning (I sometimes switch out a variety of different seasoning...but it changes the taste sooo much. Old Bay is my favorite.)

Cook the shrimp just opaque. (you can boil - but I prefer sauteed in a 1/2t. olive oil - it concentrates the flavor of seafood & gives it another layer of taste) Transfer to a small bowl and set aside. Blend the mayo, lemon juice, green onion, and seasoning in a food processor until smooth; add shrimp and pulse until they are very finely chopped and the mixture is well blended. Cover and chill.

WLS 1/2 c.. portion: Calories-115, Fat-7g, Carbs <1g, Protein- 12g

Makes 2.5 cups

Simple Horsey Sauce

1C. of Fat-Free sour cream
3T. concentrated Chicken broth
2t. sweet paprika
2T. prepared horseradish

In a small bowl, combine all ingredients and mix well.

If you are not using right away, refrigerate. Sauce can be refrigerated in a tightly sealed container up to a week.
I like it room temp. when I eat it with cold boiled shrimp.

Calories-24, Protein-1.5g, Fat-.5g, Carbs- 3g

(Daily total: 736 cals, 19 g fat, 10 g saturated fat, 92 cholesterol, 16 g fiber, 68 g protein, 1, 826 g sodium)

Day2
BF: 1/2 cup 1% cottage cheese, 1/4 cup unsweetened applesauce.
snack: 8 ounces protien supplement
Lunch: 1 can cream of chicken soup
snack: 8 ounces protien supplement
Dinner: 2 ounces cod fish, 1 cup mashed yam
Optional 4 ounces Dannon Fruit blends
(Daily total: 737 cals, 21 g fat, 7 g saturated fat, 83 cholesterol, 13 g fiber, 66 g protein, 2, 394 g sodium)

BF:1 egg poached, 1 ounce cheese

(Daily total: 737 cals, 27 g fat, 9 g saturated fat, 70 cholesterol, 19 g fiber, 75 g protein, 1, 130g sodium)

BF: 1 egg scrambled, 1/4 cup salsa

Lunch: 3 ounces skim ricotta cheese, Vanilla extract, sugar subsititute

Optional: 4 ounces protien supplement
(Daily total: 770 cals, 37 g fat, 18 g saturated fat, 65 cholesterol, 13 g fiber, 78 g protein, 2, 500g sodium)

Optional: 4 ounces Dannon fruit blends
(Daily total: 641 cals, 24 g fat, 9 g saturated fat, 55 cholesterol, 9 g fiber, 64 g protein, 1, 122g sodium)

Red face Ricotta: for more than lasagna

RICOTTA cheese (low or no fat) mixed with strawberries or blueberries. She added a little stevia...but I'm using splenda! OMG....this is soooo good - it CAN NOT BE RIGHT!!!
1/4c. POLLY-O Fat Free Ricotta (cal-50, Protein-10g, Carbs - 3g)
Then strawberries - (1c. = Cal- 46, Protein - 1g, Carbs - 11g)

Another Ricotta Recipe from Lisa Fr1endly2:

Peanut Butter-Chocolate Ricotta Crème
Two servings.
1 cup low fat or part-skim ricotta cheese
1/2 teaspoon vanilla extract
2 or 3 packets Splenda
1/2 to 1 tablespoon natural peanut butter
1/2 to 1 tablespoon baking cocoa (or 1 to 2 tablespoons sugar-free chocolate
syrup)
Mix as desired, put in 2 serving dishes, chill, and serve. If using chocolate syrup, you can pour on top instead of mixing in, if desired.

AMY!!! I found this for you finally....and thought I'd make it easier...and start to put more and more "Pureed Recipes" all together here.

This post was our original ideas for this thread....so here you go...try this for your sweet cravings...I really love it!!!

Protein Pudding Treat


1 box Jell-O Sugar Free Instant Pudding mix, any flavor
2 c. Skim milk, cold
1/2 t. vanilla, coconut, or almond extract
4 scoops protein powder (such as zero carb Isopure creamy vanilla - or ProPlete Gold Banana cream...etc. (GNC))
3/4 c. Cool whip (sugar free)

Pour the dry pudding mix into a medium bowl. Whisk in the milk and vanilla. Mix until smooth & thickened. Whisk in the protein powder and fold in the whipped topping to lighten. Chill the mixture.

WLS 1/2 c. portion: Calories - 84, Fat - <1gr., Carbs - 6gr., Protein - 20gr.
Makes 3 cups.
