We kinda hijacked Diana's thread on the "cake in a mug" recipe with a discussion of these goodies. Here is Clancy's recipe.

Also, you don't even taste the pumpkin ~ it just has a very moist, thick and yummy texture. You can also use the vanilla RS mix but then it does taste like pumpkin so you might want to add appropriate spices for that.

As I said, be careful with this one, I only make it on special occasions.
I made a batch of them using the mini-sized cupcakes, and got 48 of them. They taste much better (in Peanut's expert opinion) served the next day at room temperature than they do hot fresh from the oven. I only have one cupcake pan, so I did half of them yesterday and put the rest of the batter in the fridge. Today I'm cooking up the other half.

For that little bit extra, add half a bag of Hershey's SF Chocolate Chips to the batter. (I will not be responsible for anyone's loss of self-control!!)

Without knowing what was in the recipe, I asked Peanut to guess what was in them, and she didn't even come close. No way was she thinking there was pumpkin in them!

Late Breaking News - the second batch just came out of the oven, and it seems that there was no ill effect for it spending the night in the fridge prior to baking. (Now what am I gonna do with a couple dozen more of these little things? ) (Cue the song from West side Story - "There's a place for us, somewhere a place for us ...")

Yes, you can often get insurance cover for your Weight Loss Surgery.

Is the reduced sugar cake mix by the other cake mixes?
Perfesser what is the nut value?

As for the rest of them...try freezing them. You may have extra company in a few weeks. Heck you invited a couple of hunderd people over. Only 6 hour drive for me. And yes I have been thinking about it. I hate driving in the heart of Minn though. I map quest Abbott hospital already.

Hey ~ glad you liked them - didn't mean to hijak ~ sorry!

By the way, I did the muffin in a mug. I did alter it a bit by adding 1/4 chopped Fuji apple & 2 more T of Splenda as I like sweet muffins. I'm thinking these would be great for work for morning breaks ~ Thanks for sharing everyone

On the choc muffins, I'll figure out the nut content and be right back.....

Ok, so I add all the nut value together for the 3 eggs, 1 15oz can pumpkin and the whole cake mix. Divide by the number of servings. So, CT's muffins are about 46 calories each, mine were 122 calories each.

There you go ~ Didn't do the vitamins but pumpkin is really high in Vit A.

Next time make the little ones! Three of those gets the same guilt response, but at a much lower level of caloric exposure!!

The downside is that there are whole lot more of the little blighters screaming your name in unison!! "EAT ME!! EAT ME!!" Who can ignore such a sweet choir?
