Crockpot Turkey
To do this, you will need a large crockpot and a small turkey. I have a 6-quart pot and bought a 10 pound turkey. It worked.
Today was Peanut's day to do volunteer work up in the Cities for our church. She left home about 7 AM. It's also my night to teach late (class gets out at 8:30 PM, I get home by 9:30 or so). So I decided to do something special for her and put something in the crockpot so she'd come home to good smells and food. This is what I came up with.
Ingredients:
1 10-pound turkey
baby carrots
1 large onion
1 apple
1 green pepper
warm (soft) butter
salt pepper
No liquid is needed. The turkey has lots, and you should get at least a quart of broth out of this at the end.
Spray the inside of the crockpot with Pam or similar spray, or otherwise lubricate it. Test to see if the turkey will fit and make appropriate adjustments (mine wouldn't quite go in, so I hacked a couple of inches off the end of the drumsticks. Nothing there anyway. Then it fit in nice and snug. I also removed the final tip segment of the wings.)
Rub the turkey all over with the butter and cover it with salt & pepper to taste.
Cut the green pepper, onion and apple into quarters. Stuff them into the body cavity, but don't force pack it. Put the turkey into the crockpot and surround it with the rest of the veggies and carrots. Stuff as many carrots into small or tight places as you can.
Put the lid on, set it to "high" heat, and 6-7 hours later, dinner's ready.
NOTE: It doesn't want to come out of the pot, and may fall completely apart (like mine did), but the meat is cooked to perfection and moist.
