Lightbulb Pumpkin Mousse!

HEY FOLKS a new recipe for the holidays:

It's EASY... and delicious!

Pumpkin Mousse
One 15 ounce can Libby's 100% pumpkin
3 cups heavy cream (see note)
3/4 cup Splenda
1/2 teaspoon pumpkin pie spice
1 tablespoon vanilla extract
Murray Sugar Free Ginger Snaps, for garnish

Combine pumpkin, 1 cup cream, Splenda, and spice in a medium saucepan. Simmer over medium heat for 5 minutes, stirring frequently. Remove from heat and chill. Whip remaining 2 cups heavy cream and vanilla until soft peaks form. Fold whipped cream into chilled pumpkin mixture. Spoon into your prettiest wine glasses and crumble ginger snaps over top just before serving.

Note: This is best with real cream, but if desired, use 1 cup heavy cream cooked with the pumpkin and 3 cups Cool Whip to fold into chilled mixture

well with splenda and the cool whip switch im thinking this is the perfect dish for us to bring to our gatherings next week...do you have a favorite
recipe to share MSMOM???even if not wls friendly i would like to see this thread grow in recipes!!!! for thanksgiving:

Ok Got the mouse copied, cannot wait to try it., how many people will it serve, sounds like alot.
I hope you enjoy this salad., it is so good.

CRANBERRY "HOLIDAY" SALAD
I regular size box of (sugar free) cherry flavored gelaton. (Jello)
2 cups boiling water.
3 small apples, 2 cups fresh cranberries.
1 small orange, peeled and sectioned.
1 cup each pinapple in own juice (drained) and finally chopped celery.
Sweetner to taste, equal or splenda.

Stir jello into heat proof bowl with 2 cups of hot water till dissolved.
In food processor combine: apples, cranberries, orange sections, and process till chopped fine but not watery. (do not puree, just pulse till finely chopped.)
Add mixture to jello, add pineapple and sweetner to taste.
Pour into serving bowls or one bigger size for on table.

Cover and chill overnight., serves about 8 to 10 people. about 40 calories a serving. Can use some SF whip cream if wanted...but is just as good, refreshing alone.
I hope you like it, the folks here love it and do not know there is cellery in it...hehehehe...if only they knew!!!!!!
