Default WLS friendly holiday dessert!

Meringue "Pie" CrustsPre-bake these safe and delicious meringue crusts. Top with sugar-free pudding and fruit for a delicious finish to any Thanksgiving meal.
Ingredients:
4 large egg whites
1/4 teaspoon cream of tarter
1 cup superfine granulated sugar or sugar substitute
1 teaspoon confectioners sugar


Directions:
Make Meringue Shells. Put oven racks in upper and lower thirds of oven heated to 200 degrees F. Line 2 large baking sheets with parchment paper and set aside.
Beat egg whites in a bowl with an electric mixer at medium speed until whites are foamy. Add cream of tarter and salt. Continue beating until whites hold softpeaks, about 5 minutes. Fold in remaining 1/2 cup superfine sugar and gently blend.
With a spoon create individual "pie" shapes on the parchment lined baking sheets. Each "pie" should measure 5 inches with a 3 inch well in the center. Using a fine-mesh sieve, lightly dust confectioners sugar evenly over meringues. Bake with oven door propped open for 2 1/2 hour. Turn oven off and let meringues stand in oven, with door propped open for at least one hour. Remove meringue shells from parchment and store, tightly covered, until serving time.

<A shape=rect name=article2>Pastry Cream Filling1 package sugar free pie/pudding mix
1/4 teaspoon vanilla
Soy Milk
Follow directions on the box and make pie/pudding filling using soy milk in place of milk, adding 1/4 teaspoon of vanilla. Cover and chill.

Fruit Topping8-10 Kiwifruit
squeeze fresh lime
1/2 cup pomegranate seeds (1 pomegranate)
Clean and slice kiwifruit into a bowl. Halve lime and sqeeze over kiwifruit. Toss to combine. Seed pomegranate in separate bowl. Be careful not to crush pomegranate seeds. Set aside at room temperature.
Other seasonal fruit may be used for the fruit topping. Look for seasonal fresh fruit at your local market or farm stand. Prepare as desired.

That sounds like a little peice of heaven here on earth. FOR REAL. I am off from work tomorrow and I am going to try that. I will let you know what my tummy thought of it. I AM SURE IT WILL AGREE THOUGH, BIG TIME. LOL HAPPY TURKEY DAY TO YOU!

THIS recipe seems to involved for me but I am gonna try
to do the pumpkin MOUSSE tomorrow or GLAD it sparked
an interest for some!
