Lightbulb Sugar Free Holiday Fudge

Holiday SUGAR FREE FUDGE!!!!

if you need a holiday treat try this recipe
for your fudge needs:

2 ounces unsweetened chocolate
1/2 cup + fat-free half & half
1/2 cup reduced-fat, all natural creamy peanut butter
1/2 teaspoon vanilla
1/3 cup artificial sugar (I like Splenda®)
1/2 cup dry roasted peanuts


In heavy saucepan, over low heat, melt chocolate in 1/2 cup fat-free
half & half.
Stir in peanut butter and stir until smooth, then remove from heat.
Stir in vanilla and artificial sweetner.
Fold in peanuts and spread onto non-stick 8×8 pan or dish.
Refrigerate and cut into peices.

CAME THROUGH FOR ME AND MANY MANY OTHER ON HERE ONCE AGAIN. LOL THANKS FRIENDLY. Guess what I am going to try Friday night????????? lol lol lol I will let you know how it turns out. I think I will try a different nut though.

Mmmm, sounds yummy.
Just a word of caution, keep in mind, "sugar free" does NOT mean "calorie free" or "carb free".
So, you still need to count the carbs and cals, even if they are low.

exactly! DOC these proly have high calories, tons of carbs and proly fat too
but i think its still nice to have somethign we can endulge in on the holiday and i think its great to start getting the rest of the family
to eat better with recipes like this. I rather eat this then some
real made thing. THIS year the holidays are harder. LAST year
i had not desire to eat this stuff but this
year im faceing different issues.

I wont have this but on a holiday!

Thought this might help its a sugar free marshmellow creme that will proly work with the rice crispies with some creativity:


Sugar-Free Marshmallows & Marshmallow Creme

3 envelopes unflavored gelatin 5 tablespoons Splenda sugar substitute 3 egg whites 2 teaspoons vanilla extract 1/4 cup cold water 3/4 cup boiling water 1/2 teaspoon marshmallow flavored oil (LorAnn or American Spice) (optional)
Sprinkle gelatin over cold water in a mixing bowl.
  1. Set aside for 5 minutes to soften.
  2. Add to boiling water in saucepan; cook and stir until gelatin is dissolved.
  3. Remove from heat.
  4. Cool to consistency of thick syrup.
  5. Stir in Splenda® and vanilla (and marshmallow flavored oil if using.).
  6. Beat egg whites till soft peaks begin to form.
  7. Very slowly, trickle a small stream of gelatin mixture into egg white, beating until all gelatin is mixed in.
  8. Continue beating until light and fluffy (but not until they're dry.) If you're making marshmallow crème, pour into a jar (jelly jar, peanut butter jar, etc.) and refrigerate.
  9. If making marshmallows, continue-- For Mini marshmallows-- Pour into greased and floured pan, cool to set, and cut into size desired.
  10. For larger marshmallows, or marshmallow"eggs"-- Fill large square pan with a mixture of 2 parts vanilla protein powder to 1 part dried milk powder (the new Keto milk powder works well here.) The pan should be about two inches filled.
  11. Take a dry raw egg and make indentations in the powdery bottom with the fuller base of the egg for making marshmallows, or with the oval side of the egg for making marshmallow"eggs" Then pour the marshmallow creme filling into the little"moulds", sprinkle a dusting of the powder mixture over tops of marshmallows, and allow to set If you make the"eggs" and want to cover them with chocolate, melt the dark chocolate low-carb bars in the microwave till very soft and almost liquid (you can use the Carbolite, the DeLite bars, etc.) Dip each formed marshmallow egg into the chocolate quickly to coat and place flat side down onto waxed paper to set.
  12. Or use the marshmallow crème wherever your creative mind takes you! THIS is where im thinking it might work with rice krispies!!!

I guess when I made that post, I was feeling naughty. lol It is very true though. I have checked out many many sugar free candies. The carbs in them are alot. I guess it's the fact that I still have it in my head that at Christmas time, it's a time to eat whatever I want. I am doing diligently for the record though. lol Two tiny Christmas cookies with no frosting and a dateball in like a month. Both made with splenda. They have been in the freezer this whole time, I have been a very good boy with knowing they are in there and not wanting to eat them all. lol THANKS DOC, though, for keeping me in the real world with the fact that everything has at least something in it.
