Hi All,

I always make cherry cheesecake for the holidays, so I wanted to figure out something similar that I can still eat now that I've had WLS. Here's what I came up with and it is EXTRA YUMMY!

Low Sugar No Bake Cherry Cheesecake

Ingredients:

I box of sugar free instant cheesecake flavored jello pudding
1 3/4 cups of fat free milk
1 square package of fat free Philadelphia cream cheese
1 Graham cracker pre-made pie shell (any brand)
1 can of Comstock light pie cherries
1 Tbsp of lemon juice
1 Tbsp of granular Splenda

Directions:

Follow the directions on the instant pudding for making pudding pie. Add lemon juice and Splenda at this time to the pudding mixture. Once mixed, add in chunks of slightly melted (melt in the microwave for about 20 seconds in a dish) cream cheese until the mixture is dense and scoopable. This usually takes me just a couple of minutes with the blender because the cream cheese thickens the pudding quite a bit.

Scoop the pudding mixture into the graham cracker pie shell and smooth it into the shell so that the top is flat and level. Put the pie into the refrigerator for about 2 hours. Once the pie is cold, pour the can of cherries on the top and spread around the top of the pie. Refrigerate for about one more hour and then serve cold. Once done, the pie is a bit soft, like soft custard, but is really good. The whole thing is really low in sugar with the cherries having the most sugar, but I only eat two or three of them with my slice, so not too bad. The whole family loved it and it will become a mainstay in our household. Enjoy!
