| Slow Cooker Chicken Taco Stew This is so good...
I ate 1/2 cup and did not get nauseous. Ingredients - 1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 16-oz can corn (drained)
1 8-oz can tomato sauce
2 14.5-oz cans diced tomatoes w/chilies
1 1.25-oz packet taco seasoning
1-2 boneless skinless chicken breasts Directions
Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving, remove chicken and shred. Return chicken to slow cooker and stir in. This is good eaten with cheese. - Servings Per Recipe: 14 (3/4 cup is a serving size)

This is very similar to how I make chili. I'll use whatever meat is available, sometimes several if I have them. I also add a can each of white and golden hominy. It adds color and gives it a great texture. For the chili I use Carroll Shelby's chili mix.
I have a pot of this recipe in the crockpot right now. Instead of chicken breasts, I pulled a bag of legs out of the freezer, so I have a dozen drumsticks on top of the whole thing. I like dark meat anyway!
(The store had a good special on leg quarters last spring, so I bought a couple of 10-lb bags at $0.39/lb. Brought 'em home, separated and skinned 'em and packed the legs and thighs in separate bags for the freezer. LOVE that vacuum sealer!! I still have a few bags left. Gonna hafta do it again when the spring BBQ specials start.)
