Thumbs up Low Carb Sugar Free Peanutbutter CheeseCake

Hi Found this recipe and tried it. I froze the servings in indivual ziplocs to take out when I want.


2 packages of 8 ounce fat free cream cheese
1/2 cup of vanilla sugarfree syrup(i used sugarfree pancake syrup)
3/8 teaspoon of Splenda or Stevia
1/2 cup of low fat low sugar peanutbutter
6 eggs
pinch of salt
3/4 cup of low carb sugarfree dark chocolate (for the topping)

preheat oven at 350 degrees and spray a glass pie dish with olive oil spray or whatevr you choose to use

Combine all ingredients except chocolat in a blender and blend until smooth. Poor into pie dish and bake at 350 degree for 50 minutes.

Melt the chocolate in the microwave and spread over the pie while it is still warm. Chill and enjoy!

Serves 8....about 4.5 grams of carbs per serving

This sounds really good!! I am so glad you guys do this, I may be able to cook (quite well actually) but for some reason even though I am diabetic and a lot of other things I never learned how to cook for my needs, just everyone elses. Thanks!

I made this tonight. Turned out pretty tasty, but it's soooo rich, there's no way it can only make 8 servings!! 16 would be more like it! (All the more to love, eh?)

I used a box of unsweetened baker's chocolate with 3/4 cup of Splenda and melted it in a double boiler so it wouldn't scorch or get too hot like the microwave could do. (Actually, I melted it in a small glass bowl in a pan of boiling water. You don't need a double boiler to get the benefits of one!!)

This one's gonna go to the next church potluck!!

I too cut my into 16 pieces, I realized that i couldn't and wouldn't eat an 8th of it. I have thought of different flavors for variation too, if you aren't a fan of the peanutbutter. Glad you liked it!
