Default yummy dinner....here's the recipe!

I made curried shrimp and lentils last night for dinner....yum! It's a crockpot recipe, its easy, and it tastes GOOD!

you need....1 clove garlic minced, 1 onion minced, 2 stalks of celery minced, and 2 tbsp of peeled chopped ginger. Put this in the crockpot with 2 1/2 cs of vegetable broth (I used chicken because I had it). Add to it 4 tsp of curry powder, 1/2 tsp of cinnamon, 1/2 tsp salt, and 1/8th tsp cayenne pepper. To this add one cup of lentils. cook on high for 2-3 hours or low for 3-4 hours. Add 2 pounds of shrimp peeled and deveined during the last 15 minutes of cooking. YUM! I made a dill yogurt sauce and put it over sliced cucumbers and it really complemented the spiciness of the dish. Not sure where the recipe came from, but a friend let me know about it, and my only regret was I could only eat about 6 bites!but boy did I enjoy those 6 bites!

Try it and see if you like it! You can adjust the spiciness to taste, of course.

high protein, low fat, and YUM! what more could ya ask for?
