Ok here is the deal, I opened up my big mouth and really stuck my foot in it this time. I enjoy watching shows like Ace Of Cakes because I think the stuff they do is absolutely amazing, so I wanted to be the one to make my neices birthday cake instead of my sister just buying one. I figure if I am going to make it then perhaps I should try to make it so that I can eat it without concern as well as my grandfather and my dad's girlfriend who are both diabetic. Soooo I was hoping perhaps someone here has done this and knows a good recipe both for the cake itself and also for some kind of buttercream icing. The plan at this point is for a 1/4 sheet cake with a small round cake on top. Rocks around the round cake with some kind of slide down into a pool on the sheet cake. It's going to be a beachy scene type of cake and I plan on using the palm trees and such out of the little plastic bags of toys you get at the dimestore, you know the type that come with dinosaurs or little army guys etc. Here is to hoping y'all can help me out once again

I made a butter cream icing on a cake for my wife's birthday a week ago and used shortening in the icing for the first time. It made the icing a little less sweet tasting and easier to work with when applying to the cake than simply using icing sugar, milk and butter.

Nothing non fattening about the cake or icing I made but I only eat such a small portion it doesn't cause any long term damage to me and my weight loss.

Why not make two cakes? The first a traditional one with all the sugar and fatty milk products (such as butter, icing sugar, etc.) and the second one you can use sugar free instant pudding to make the icing. Here is a the quick version:

Combine one small packet of sugar-free instant pudding mix (dry, straight out of the package) with one 12-ounce container of frozen whipped topping, partially or fully thawed. Beat with an electric mixer until smooth and creamy. Add a few drops of food coloring and flavoring of your choice.

You need to store this in the refrigerator when its done but it means everyone can enjoy your home made creation beyond simply admiring the work of art, but eating it guilt free as well.

Send in a picture after you bake it.

I know--I know Thor is a baker by trade and he will have something for ya. Sorry I don't bake at home much at all and the recipes and formulas I use call for 50 pounds of this and 30 pounds of that.

When the boys were little we were in Cub Scouts and we used to have a Father/Son cake competition and auction. That was fun! We made cakes to look like volcanoes (tallest cake award winner), one that looked like a plate of spaghetti and meatballs and other fun stuff. It was stressful with everyone knowing what I do for a living though.

Have a blast with making the cake, your niece will always remember it even if it doesn't come out the way you planned it. We are always our own biggest critics
