Turkey Pesto Meatloaf
this is a personal favorite and I don't particularly care for spinach!!



Servings: 4
Digestible carbs per serving: 3

Protein per serving:
50



1 pound ground turkey
1/4 cup pork rinds
1 (10 ounce) package frozen spinach, thawed
1/4 cup Pesto
2 garlic cloves
2 teaspoon dried oregano
3 slices mozzarella cheese
1 egg, beaten
1/2 teaspoon salt
1/4 teaspoon pepper


1. Preheat oven to 375.
2. In large bowl combine turkey, spinach, pork rinds, garlic (minced), pesto, egg, oregano, salt and pepper.
3. Put mixture into 9-inch-5-inch loaf pan.
4. Top with Mozzarella cheese
5. Bake 45-50 minutes until cheese is golden brown.
6. Cool for 5-10 minutes and serve.

To let you know, Cherish, meatloaf is like one of my favorite meals. NO LIE. I can cook anything actually, but while the wife was in the hospital, I practically lived on it. LOL I was always on the run, going to see her, and taking care of kids after school things. I just had to heat it up. To tell the truth now, though, it's time for a change in recipe. LOL Thanks for posting it.

I usually put oatmeal in my turkey meatloaf and others I know use bread crumbs but I have never heard of pork rinds. How do they cook up in the meat? Just curious, may have to try that.

When I was on Atkins I used pork rinds in my beef meatloaf and they cooked up great but I also do not know how much fat are in them.
