Tangy Watermelon Salad
Ingredients:
4 cups cubed seedless watermelon
2 tbs. olive oil
3 tbs. lime juice
1 tbs. red wine vinegar
¾ cup crumbled feta cheese
¼ cup coarsely chopped fresh mint or Italian parsley
Directions:
Place watermelon cubes in a large bowl. In a separate small bowl, whisk olive oil, lime juice and vinegar. Pour over watermelon. Toss to coat. Add salt and pepper to taste. Gently stir in feta and mint or parsley. Serve salad immediately in a watermelon wedge shell if desired. Makes 4 - 1 cup servings.

Question for the vets reading this:
I am allowed to have fruits at the end of the week but was told to be careful of citrus. Anyone think the lime in this would cause a problem? Granted, the most I can eat at a sitting is 1/4 cup so it would be a pretty small portion.

1/4 cup = 4 servings per cup. 4 servings/cup x 4 cups = 16 servings per 3 tbsp of lime juice = 3/16 of a tablespoon per 1/4 cup serving.
Speaking just for me, I wouldn't worry about it, but I'm not 4 weeks out either.
