Default Breakfast Muffins

I started making my own low carb cookbook several years ago....here is one my favorite recipes...ENJOY!

Breakfast Muffins

Good news for those folks who have hetic mornings with little time to eat. Prepare this recipe....these muffins last a couple of weeks in the frigerator and heat in about 30 seconds in the microwave! Great for those people on the run or for a simple snack!

Prep time:
10 minutes
Baking time:
25 minutes
Servings:
24 muffins
Carbohydrates per serving:
1 g per muffin
Protein per serving: 6 g per muffin
Calories per serving: 182 per muffin

10 small sliced of Candian Bacon
6 eggs
1 1/2 cup ZeroCarb Baking Mix (carbsense) or Atkins Baking Mix
2 cups heavy cream
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups grated cheese (I use cheddar)
cooking spray
3 tablespoons caraway (optional)

1. Preheat oven to 350
2. Cut up candian bacon
3. Coated muffin tin with cooking spray.
4. In medium bowl...Combine eggs, baking mix, heavy cream, caraway seeds, bacon, shredded cheese, salt and pepper together.
5. Scoop 1/3 cup into each muffin
5. Bake for 25 minutes at 350º F.

Optional:
add some onions, green peppers, and mushrooms or fresh herbs such as cilantro, basil...etc.

Alt Weight Loss Surgery Insurance
Yes, you can often get insurance cover for your Weight Loss Surgery.
Our own Craig "Big-T" Thompson has been there and done that, and he's written an e-book about it.
