Default Baked Eggs in Tarragon

I started making my own low carb cookbook several years ago....here is one my favorite recipes...ENJOY!


Baked Eggs in Tarragon
Extremely quick and easy to make!!
Can be used for a snack, breakfast or an appetizer.

prep time: 5 minutes
Bake time: 8 minutes
Servings: 4
Digestible carbs per serving: 1
Protein per serving: 10
Calories per serving: 183

1 tablespoon of butter
4 eggs
1 tablespoon fresh tarragon
salt and pepper
4 tablespoons heavy cream
4 slices Swiss cheese (optional)

1. Preheat oven to 350
2. Butter 4 individual ovenproof custard cups and break an egg into each cup.
3. In a small bowl, mix heavy cream, tarragon, salt and pepper.
4. Carefully spoon 1 tablespoon heavy cream mixture into each serving. Cups will be half full.
5. Top with cheese.
6. Put cups on baking sheet and bake 6-8 minutes*. Serve hot.

* 8 minutes for a hard yolk and less for a softer yolk.

Thank you, Tammy What I love about this recipe is that you can use whatever herb(s) you have on hand......I personally love it with cilantro or basil....sometimes I will change the cheese too....which also adds more variety.
