mmm, mmm, Good
1 large can of vegetarian refried beans
2 large red and orange pepper
1 large red onion
1 small can diced tomatoes
1/2 a bunch of cilantro chopped
1 package of fajita seasoning
a couple pinches of cheese
Cut chicken into cubes or strips. I used chicken thighs, just because professor
said there was more protein in it than in chicken breast.
Sear with spray olive oil and half of the pack of seasoning until half way cooked.]
Put beans, peppers, onion and tomatoes in big pot with the other half of the seasoning pack and cook at medium heat.
When chicken is half way cook through put it into the pot with the beans and stuff.
Stir so the beans don't stick
after about 10 minutes, when the pot is bubbling, put the cilantro in. Let it cook for a couple more minutes, put lid on.
Make sure chicken is cooked through.
Put it into bowl, sprinkle with cheese, and enjoy. Yummy!!!

cool  sounds like a nice dinner! I still cant eat chicken thighs... make me feel urgh, but after about post op 6mths or so, chicken breast was sweet as.

I think that I used 2 or 3 thighs, the boneless from Tyson but I think that I will use more next time I make it. I've never been able to cook beef strips to be as tender as chicken that is probably why I use chicken for more things than I do beef.

I would imagine the beef would get just as tender if it were done in a slow cooker...mmm...beef fajita soup...in the slow cooker....light bulb!

No matter, I've probably said a lot of things I hope I never have to account for!!  But it's true that I would recommend the thigh over the breast. I've always preferred the dark meat, but for WLSers the thigh is moister meat than the breast and chews up easier.
What are you using for liquid? The only thing I see here is what would be in the can of tomatoes. Or is that just left up to personal taste? (I have gallons of turkey stock in the freezer.  )
