Sweet Potato and Sausage Hash
I don’t know if “hash” is the right word or not, but what the heck, the recipe’s more important than the name anyway.
I made this tonight and Peanut liked it. She even told me I could make it again, so I have to write down the recipe while I still remember what I did. Hope you like it too!

Ingredients:
1 large sweet potato
1 large onion
1 green pepper
1 lb. “Lite” smoked sausage (pre-cooked)
1 thumb-sized piece of ginger root (big thumb)
1 Tbsp minced garlic
Seasoning salt
Pepper
Oil
Butter
Prepare all the ingredients first. I used my mandolin slicer to make french fries out of the sweet potato, then cut the pepper, onion and sausage into manageable chunks (I sliced the sausage into thin rounds.) Peel the ginger root and mince it as fine as the garlic.
I put some olive oil and butter into a deep 12” skillet and heated it up (only about 1/8” deep. You don’t want to deep-fry this.) Get it good and hot, then put the sweet potato fries in. Give them several minutes with a lid on, then turn them over. Add the garlic and ginger. Cover again and give them a few minutes, then mix them up again and add the onion and pepper. Cover it again and give it a few minutes longer. Mix it all up again and add the sausage. Sprinkle on the seasoning salt and pepper and give it a few more minutes covered. (Keeping the lid on ensures that the veggies are steamed, not fried.)
By now things are starting to smell pretty good, people are sticking their noses in the kitchen and asking when it’s gonna be ready, and your stomach is growling in eager anticipation. When the veggies are cooked and the sausage is hot, you’re ready to dish it up and enjoy it!!
The ginger adds an unexpected taste that compliments the sweet potato quite nicely. Peanut doesn’t care for ginger but she allowed as how this was pretty good eating!!
It’s a light, colorful dish with a great taste. Well, that’s my story and I’m sticking to it. Hope you agree!!
