Peachy Pineapple Pork Roast
I got creative with a boneless shoulder roast I got on sale last year sometime. It worked. Hope you like it! (There's just no telling what else is in that freezer!!  )
Of course, all canned fruits are no sugar added, packed in their own juice or water.

Ingredients:
2 tablespoons each of olive oil and butter
Pork roast – whatever will fit in your pan
1 can pineapple, crushed, tidbits or sliced – your choice
1 can sliced peaches
1 medium-large onion, sliced
I had a half-pound of baby carrots in the fridge waiting for their chance to shine, so I threw them in too for a veggie
1/2 cup of your favorite fake brown sugar
Water as needed
Directions:
Preheat the oven to 275º F.
Drain the fruits into a bowl and add the brown sugar. You’ll eventually need to add some water, but you don’t know how much yet. Peel and slice the onion.
Heat the oil and butter in a pan and brown the roast on all sides. Pour the liquid over the roast and add water until it’s about 1/3 – 1/2 way up the side of the roast. Put the onions on and around the roast, do the same with the fruits and put the carrots along its sides.
If you have one, insert the temperature probe, then put the lid on the pan and pop it in the oven. It took 2 hours to do a 3.6 pound roast. I shut the oven off at an internal meat temperature of 162º and it coasted up to 185º, which is nicely done for a pork roast.
Remove it from the pan, let it rest for at least 5 minutes to let the meat re-absorb the juices so it’s not dry, then slice and serve with the fruits and carrot on the side and a bit of the juice on the meat.

which kind of artific. brown sugar do you and peanut like? I have been hesitant to try it cuz last experience it was quite awhile ago(more that two decades) it was very bitter and aftertaste was terrible. I have been reluctant to get a bag or box. I'd love to know which brand you all prefer. We seem to have similar tastes in things by looking at the recipes you have posted. Your peanut butter mousse Pie for example. I should have used that disclaimer for my little snacks and I was pleased to see that you used the cocoa pwder with the warmed peanut butter. I thought next time I tried the snack mix that I would use that and completely take all sugar out of the equation.! I appreciate your reply. thanks in advance

I used Sugar Twin because it was in the cupboard. We've also used the Splenda mix, but it gets hard like real brown sugar. The Sugar Twin is a pourable powder. Cup for cup measured the same as the real thing.

| what a guy!  thanks Prof. I have to tell ya. every time I see your before and after pop up I am amazed at your results. I just love it that you are still here. It seems there are many that are here thru the first trials and then fade away never to be heard from again. I just wish to say how much I appreciate you guys and gals that have a few years behind you still here to encourage/admonish and lift up that spirits of those of us still in the trenches. |

| Waddayamean "those of us still in the trenches"? You think maintenance isn't its own struggle? The real work of WLS doesn't even start until after you reach goal!!  (What, someone forgot to tell you that? Believe it!!)
But I know what you mean. Those of us long-term veterans who have stuck around have seen 'em come and go, and if you stick around long enough, some of 'em come back again asking how to get back on track because it wasn't as easy staying at goal as they thought it was.
Making this work long-term takes as much effort as we should have given our health when we had a chance to avoid the need of this WL journey. The rules only work if they are followed. You may have seen us mention that a time or twelve! There's a reason!!
By the way - you're welcome! Those of us who stick around do it largely for our own selfish reasons - it helps keep us on track, too.

But don't we ultimately do everything for a selfish reason? Helping others is a reward in itself! (Especially for those of us whose destiny it is to teach!!) We help others, we are helped too, a rising tide lifts all boats.
You're right, it is a war for life, but the drop zone in a war is often where it is safe to fly in the choppers, not necessarily where the action is the thickest!! We welcome anyone who'll come on out and stand with us.

Morning hope all is well and that life is grand! Did you by chance do a caloric total on the receipe? Just wondering what portion size on the veggies and fruit do you suggest? The pork is fairly obvious. I know, the answer will obviously be built upon what goes in comes out... but I was curious as to your build of it. I'm just about to go to phase 3 - soft foods, so this is still aways off. Thanks for sharing

Larry, I've never worried about calorie counts and such. Occasionally someone will run something through the calculators and post what they find, but I leave that to them if they want.
As to serving size, experience will teach you what is appropriate. I figure if what goes in is good stuff, what comes out can't be too bad, and we can't eat a whole lot anyway ...
