Default Cheesy Beef Casserole

Ingredients
1olive oil cooking spray
1
small russet potato
1cup
shredded mozzarella cheese
1lb
extra lean ground beef (5% fat)
1
yellow onion , chopped
2
medium garlic cloves , minced
14 1/2oz
canned unsalted diced tomatoes
1tbsp
chili powder , or to taste
16oz
fresh shredded cabbage
1pinch
salt (optional)
1pinch
black pepper , freshly ground (to taste)
3tbsp
taco sauce (to taste, optional)
1oz
sliced jalapeno peppers , 6 slices (optional)


Directions
1 - Preheat oven to 375°F. Lightly coat 2-quart casserole with cooking spray.
2 - Peel and grate potato into bowl. Stir in 1/4 cup of mozzarella. Spread evenly over the bottom of the prepared casserole. Bake 15 to 20 minutes, until potato is browned and crispy.
3 - Meanwhile, brown ground sirloin, onion, and garlic in a large nonstick skillet, breaking up the beef with a wooden spoon as it browns. Drain any excess fat.
4 - Add tomatoes with their juice, chili powder, and the cabbage. Season with pepper to taste. Sauté and stir for about a minute.
5 - If mixture seems too dry, add 1 tablespoon bottled taco sauce, adding up to 2 tablespoons more, if needed.
6 - When potatoes are done, spoon beef mixture on top of potatoes. Top with remaining cheese and jalapeño slices (if using). Bake for 25 to 30 minutes, until casserole is hot and bubbly. Serve at once.

Total Carbs - 14.6 grams
Fiber - 3 grams
Total Fat - 6.9 grams
Sat Fat - 3.3 grams
Protein - 23.6 grams

This looks great, just a dumb question I guess, how gastric friendly is the cabbage? I haven't had any since my surgery and just not quite sure how I will react? Thanks!!!

I didn't eat cabbage until I was a little over a year out, there were a few reasons why though, I wasn't sure if I could digest it and cabbage gives you gas, but like all things food wise after WLS, its all a matter of trial and error and make sure you really chew it up good.. What works for one person doesn't work for someone else. I am 3 years out and I can eat just about anything in small amounts, corn I still have a little trouble with digestion, so I only eat it occasionally and besides its high in carbs.
