Beef & Vegetable One Pot Dinner

I like watching the Food Network show “Chopped”, where a group of chefs are given a basket of ingredients and told to make something good with them. Yesterday I went to the store and bought some stuff, brought it home, and this is the result. Peanut couldn’t categorize it, but she said she wants me to make it again!

Enjoy!!
*****************************************
Ingredients:

1 lb. ground beef
1 beef roast (2-3 pounds)

1 large leek
3 large sweet potatoes
1 butternut squash
1 red onion
1 small can pineapple tidbits (packed in pineapple juice)
1 lb. baby carrots
1 piece of ginger root (about the size of two fingers and a thumb)

1 Tablespoon minced garlic
¼ cup pure maple syrup
Ground cloves
Cumin
Black pepper

Soy sauce
Sesame oil

Directions:

Clean and cut up sweet potatoes, onion and squash (1/2” – ¾” cubes) and put it all in your crockpot with the pineapple (drain the juice first). Cut the leek in ½” sections and take them apart, then put it in the pot. Peel and dice the ginger into fine pieces and add to the pot. Cut up beef roast as for stew. Fry the ground beef in a bit of sesame oil and add some soy sauce while it’s cooking. Drain and add to pot. Sear the beef roast in sesame oil and soy sauce. Drain and add to pot. Add seasonings and syrup.

Cook in the crockpot on high for 5-6 hours or low for 8-10 hours.

Serve in bowls.

Note: The amount I made was designed for a 7-quart crockpot. You may wish to adjust volumes depending on the size of yours. Got lots of leftovers in the fridge!!

I LOVE that show! I always try to think what I might make given the baskets! This recipe sounds delicious, I think I will have to try it. Although I don't do maple syrup, any suggestions on what to substitute???

Sorry about that folks! I just had some leftovers of this and realized that I had forgotten to include the ginger root!! I have added it to the recipe now, so you should be good. Ginger is one of the things that gives it such a nice flavor!
