I love watching the show
“Chopped” on the Food Network. I love going to the farmers market to see what’s in season. So the other day I went to the farmers market and said to myself “Let’s see what’s inside the mystery basket.” This is the result.
I’m listing the generic vegetables, but if you find something special, go for it! The onion, for instance, was white and firm but didn’t look like anything I’ve seen in the stores, and it was so sweet and mild you could eat it raw! (I tried some. Delicious!! But I didn’t catch the name of the variety.) And the potatoes were little tiny things. The largest was the size of a small hen’s egg, and the smallest were the size of the tip of my thumb.
I put this together this afternoon and Peanut insisted that I write it down. She said it was perfect the way it was and I shouldn’t mess with success.
(Yes, dear!
)
Ingredients:
½ lb bacon
1 lb smoked sausage
1 green bell pepper
1 banana pepper
1 onion
1 small cabbage (or ½ large cabbage)
1 lb new or red potatoes (Yukon Gold would work nicely)
Water
Oregano
Sweet basil
Rosemary
Cumin
Cayenne (just a dash!)
Soy sauce (maybe as much as a ¼ cup)
Ground black pepper
Salt
Cut up the ingredients. I put the peppers and onion in one bowl, the cabbage in another, ditto the spuds and the sausage. I cut the bacon into 1” pieces and then the prep was done and I was ready to start cooking. I used a 5-½ quart stew pot.
Cook the bacon in the pot until the fat is rendered out of it. It doesn’t have to be browned. Add the peppers and onion and let them cook in the fat (there wasn't much) with the bacon until they soften, then add the potatoes, cabbage and sausage. Season to taste. Put in a cup of water and cover while it simmers over a low heat for an hour or so until the cabbage and potatoes are done. You shouldn't add too much water unless you’d like to make it into a soup. A cup is plenty to steam it all as it cooks. Stir as needed while cooking.
Enjoy!!
