Shelley's California Roll Salad
I found this on egg face and tried it tonight. DH liked it too. I think I'd put a little less wasabi in it but I used paste instead of powder. Maybe that made a differance. I used real crab but I'm sure it's just as good with surimi. Served with a couple of Kashi crackers. 8 oz. Crab Meat (Imitation Flake or Real) 1 Cucumber, diced (I used 1/2 English cucumber) 1 Avocado, diced 1 Green Onion, sliced on the bias Shelly's Wasabi Yogurt Dressing Optional: Baby Spinach Shelly's Wasabi Yogurt Dressing 2 oz.Greek Yogurt 1 Tablespoon Mayonnaise ( I used Light Hellman's) 3/4 teaspoon Wasabi Powder squeeze of Lime Juice 1/2 teaspoon Kosher Salt Mix crab, cucumber and avocado together. Mix dressing ingredients together till well combined. Spoon over salad. Sprinkle with green onions. I figured about 3 servings at 1 cup each 232 calories 9 carbs 10 fat 29 protein
