I didn’t do any shopping for this weekend so I decided to fake it. I was standing in front of the open fridge door seeking inspiration (ever been there?

) when I saw a few things and decided to see what I could stretch it into. Hope you like it. A little goes a long way!!
1/3 box whole wheat spaghetti
1 26-ounce can of your favorite pasta sauce (read the label for the lowest sugar content)
1 pound of ground beef (or whatever other protein you favor)
Minced onions (I didn’t have a real one on hand)
Minced garlic
½ pound Mozzarella cheese
Salt & pepper
Break the spaghetti in 1-2” lengths and put in the pan. Pour the pasta sauce over it, add onion and garlic. Heat it while you do the other things. You may want to add a little water, but you don’t want it runny.
Grate the cheese. Fry the beef and break it up into little pieces. Salt and pepper the beef as desired. Drain it and add it to the pot.
Spray a 9” square casserole dish and put down a layer of cheese (use about 1/3 of the cheese for this.) Pour in the sauce and cover with the rest of the cheese.
Bake at 350 degrees F for about a half-hour.
